July in Calgary means one thing: Stampede. The beginning of the best, or worst, 10 days of your life is finally here. Sleepless nights, overconsumption and consistent exposure to free radicals (AKA outside elements that age your skin) from being outside equals one thing: unhappy skin. Look at all the food options available during this Western whirlwind: deep-fried pickles, mountains of mini-donuts and endless Stampede Breakfasts.
To help you stay on track and possibly have one less regret, we are taking a new approach to the traditional Stampede Breakfast. Our recipe is loaded with antioxidants and other nutrient rich ingredients to keep your complexion glowing. Each ingredient in our recipe is a true skinfood, meaning it is nutrient dense with vitamins, minerals and properties that your skin will thank you for!
Ellie Bianca's Not Your Average Stampede Breakfast
Banana and egg pancakes
1 pinch baking powder (aluminum free)
Heat a skillet. Peel the banana and place in a bowl — mash well with a fork. Add the eggs and baking powder and mix together.
Grease your skillet with coconut oil. Ladle the batter into the skillet and cook till the underside is golden brown. Flip the pancakes until golden brown. Transfer to a serving plate and repeat with remaining batter.
Honey and lime fruit salad
500 g strawberries, washed, hulled and sliced
3 kiwi fruits, peeled and sliced
2 mangoes, peeled and diced
300 g blueberries, washed
1 cup green grapes, halved
1 can pineapple chunks or pieces
3 tablespoons honey
1 tablespoon fresh squeezed lime juice
1 tablespoon pineapple juice
Place prepared fruits in a large salad bowl.
Combine the honey, lime juice and pineapple juice into a jug. Pour the syrup through the fruit and mix well.
